It’s rare to find a taco filling that stands on its own without any sour cream or cheese. Granted, you can add those delicious accoutrements if you want, but it’s good to know these are tasty as-is.
And just a tip — stirring some salsa verde (or regular salsa) into a can of beans is definitely the fastest way to dress them up, with no additional chopping required.
I used about 1 medium zucchini, 1/2 an onion, several stems of kale, and a can of black beans, for plenty of filling to serve 2 people (probably with some beans left over).
